Brown Sugar Cookies For Christmas, A Maryland's Way Recipe

Cream butter and sugar; when well creamed, add eggs, beaten light. Sift dry ingredients together and stir into creamed mixture with grated orange rind. When well mixed, shape into roll and place in icebox for several hours. Cut off small amount at a time, roll out thin and cut with cookie cutter. (Use as little flour as possible). Sprinkle with cinnamon sugar before baking. Bake in oven at 250º, or faster if desired, but watch out so they will not burn. Modern Recipe Adaptation: Brown Sugar CookiesYield: 100 cookies (varies depending on size and thickness) Ingredients:

3 cups flour1 tsp baking powder¼ tsp baking soda1 heaping tbsp cinnamon2 eggs1 cup butter, softened2 cups dark brown sugarGrated rind of 1 orangeCinnamon-Sugar Directions:

Whisk together the flour, baking powder, baking soda, and cinnamon. Set aside.Beat the eggs and set aside.In a large mixing bowl, beat the butter and brown sugar together until light and fluffy. Add the beaten eggs and mix together. Add the orange rind and mix together.Mix the dry ingredient into the wet and beat until well-blended.Divide the dough into 4 equal parts, cover in plastic wrap, and chill in refrigerator for at least 1 hour.Before rolling out cookies, heat the oven to 250º and line baking sheets with parchment paper.On a lightly floured board, roll out the cookies thinly and cut with preferred cutters. Place on the parchment-lined baking sheets and sprinkle the unbaked cookies with cinnamon-sugar and colored sugars (if desired).Bake for about 18 minutes (this will vary on the thickness of your cookies).
